When he was a child, he made an omelet with his mother and it didn’t turn out the way he wanted, so he felt strongly that he wanted to make it better, and from that moment on, he became interested in cooking. With that desire in mind, I entered a vocational school to study Italian and French cuisine. After that, from the age of 18 to 22, he learned various skills at a restaurant in Ebisu and Nakameguro. After that, he gained experience as a head chef at a campsite resort in Nagano, and while spending time in nature, he encountered the vitality of nature and cooking using firewood and charcoal using fresh local ingredients, and was strongly fascinated by this simple yet profound cooking method. To further his education, he traveled to San Sebastian, Spain, where he trained at the local restaurant “Alameda.” After that, he trained at several restaurants including BRAE, a self-sufficient restaurant in Melbourne, Australia. Experience innovative dishes and new cooking methods, and learn about diverse food cultures. After returning to Japan, he aimed to become a chef who can serve more sophisticated cuisine by leveraging his past experience and became the head chef of “song”. My dream is to deepen ties with the local community and connect with the world. “I want to have a broader perspective by interacting with customers from Karuizawa and inbound tourists, and through events such as the Japan Festival.” We aim to bring out the charm of the region and serve as a bridge with the rest of the world. In addition to cooking, he says, “I want to have my own farm and rice field and face life.I also want to try raising chickens.” We strongly hope to foster a food culture that is rooted in the region. We would like to create a place where many people come to visit, as a place that conveys the importance of food and the sanctity of life. At “song”, one of our big visions is not just to provide food, but to expand the possibilities of local ingredients and Shinshu local cuisine by creating together with farmers and local people.
