Collection (hereinafter referred to as Mesm Tokyo)’s (1-10-30 Kaigan, Minato-ku / General Manager Hisashi Ikunuma) is a special afternoon tea program “Thirty-Six Views of Mt. Fuji” in collaboration with the Sumida Hokusai Museum, a Sumida City facility. From June 1, 2025 (Sunday), the 16th floor bar & lounge will be available at the 16th floor bar & lounge.
style=”text-decoration:underline;color:#428ac9;word-break:break-all;” target=”_blank” rel=”nofollow ugc noopener”>Whisk”. This program is the 14th installment (Chapter 14) of Mesm Tokyo’s “TOKYO WAVES” Afternoon Exhibition, where menus are inspired by masterpiece paintings. The program is based on the masterpiece “Thirty-Six Views of Mt. Fuji” by Japan’s proud ukiyo-e artist Katsushika Hokusai (hereinafter referred to as “Hokusai”), and will deliver a new gourmet experience where you can enjoy the beauty of the landscape and history with all five senses. This program is scheduled to be held in two parts: the first half from June 1st (Sunday) to August 31st (Sunday), 2025, and the second half from September 1st (Monday) to November 30th (Sunday), 2025. The “TOKYO WAVES” Afternoon Exhibition has so far featured overseas artworks as motifs, but this time we decided to return to the origins of Japanese culture by focusing on the view of Hamarikyu Gardens seen from the hotel and the historical background of Tokyo Bay. Mesm Tokyo, located at the intersection of the Edo landscape drawn by Hokusai and the waterfront of modern Tokyo, offers a special moment unique to Mesm Tokyo. Additionally, the fact that the “Tokyo Mizube Line,” which connects Hamarikyu Gardens to the Ryogoku area, which is associated with Hokusai, is in operation, brings further connections to this project. This program is designed to relive Hokusai’s creative background and personality, and in the beginning, we will offer appetizers that express Hokusai’s life during the Edo period in a modern style. A buckwheat galette that evokes a simple life filled with passion for creation is served with a mocktail inspired by the “yuzu medicine” that Hokusai is said to have concocted, expressing his character and Edo food culture. For the main menu, we will select 11 symbolic works from “Thirty-Six Views of Mt. Fuji” and develop sweets inspired by the tastes of Hokusai, who was known for his sweet tooth. When you open the lid, you can enjoy a moment where art and taste intersect, along with the surprise effect of small sweets appearing from the smoke. In one of his works, “Thirty-Six Views of Mt. Fuji, Noboritoura”, the torii gate is expressed with meringue and the waterfront is expressed with lychee jelly, while in “Thirty-six Views of Mt. Fuji, View of the Sunset at Ryogoku Bridge from the Mimaya Riverbank”, a financier shaped like a boat and an olive shaped like an umbrella express a playful worldview. Enjoy an immersive experience in the world of ukiyo-e that stimulates your sense of sight, taste, and intellectual curiosity. With the theme of “TOKYO WAVES,” mesm Tokyo has created original experiences where a variety of content such as art, music, food, and design intersect, while resonating with the culture and “wavelengths” of the city of Tokyo. Please look forward to this project, which will allow guests from Japan and abroad to “rediscover Japan” through their five senses. Afternoon Exhibition Chapter 14 “Thirty-six Views of Mt. We have prepared a buckwheat galette as an appetizer inspired by soba noodles. The fragrant buckwheat crepe is finely chopped to give it a unique texture. Hidden inside are ingredients such as eggs, parmesan cheese, onions, and grilled bacon, and the more you eat, the more you can enjoy the spread of flavor. Yuzu and matcha mocktail This cup is inspired by the “yuzu medicine” that Hokusai is said to have mixed. A Japanese-style matcha-inspired mocktail that pairs well with buckwheat galette. The refreshing taste of yuzu and the addition of egg white give it a gentle texture. ≪Main (11 types of sweets &

overlooking Mt. Fuji on a snow-covered morning. The milky white color represents fresh snow and snow falling on the trees, and the cherry color represents a woman standing in the snow. This glass sweet has a perfect balance of sweetness and texture, with the crisp and light granita and the refreshing acidity of dried kiwi. 【2】 Cigarette Hazel Ganache (=Thirty-Six Views of Mt. Fuji, Bishu Fujimihara) The composition of looking at Mt. Fuji through a bucket is expressed with fragrant cookie dough cigarettes and bittersweet hazelnut ganache. The harmony of the crispy and light texture and rich chocolate brings out the taste of adults. 【3】 Lychee jelly (= Thirty-six Views of Mt. Fuji, Nobutoura) A torii gate standing in shallow water and a waterside scene are expressed with light melt-in-your-mouth lychee jelly and crispy meringue. A refreshing, fresh and sweet dessert that makes you feel like the early summer breeze. 【4】 Cheese Sable Corn Pound Cake (=Thirty-six Views of Mt. Toto Asakusa Honganji Temple) The roof of the magnificent Honganji Temple is formed with a crispy tile-shaped cheese sublet and a moist corn pound cake. The saltiness of the rich cheese and the natural sweetness of the corn combine to create a dish that you can enjoy with its rich flavor and texture. 【5】 Chocolate Eclair (= Thirty-six Views of Mt. Fuji Yamashita Hakuu) “Eclair” means “lightning” in French. As the name suggests, this is a bitter chocolate eclair that represents the moment of lightning. This is an impactful sweet that has a subtle sweetness, followed by a “shock” of rich chocolate that spreads in your mouth. 【6】 Tarte au Piñon (Thirty-six views of Mt. Fuji Aoyama Enza no Matsu) A special tart that combines Japanese and Western flavors, expressing the famous pine tree and Mt. Fuji. It has a distinctive Japanese flavor with layers of fragrant pine nuts, matcha almond cream, and strained red bean paste. 【7】 Black sesame panna cotta (= Thirty-six views of Mt. Fuji, Eto Suruga-cho Mitsui Miseryakuzu) A smooth panna cotta with fragrant black sesame that is inspired by the Edo sky filled with kites. The shape is modeled after the triangular roof of Mitsui Echigoya, and the deep flavor and light texture evoke images of the expansive sky. 【8】 Rare Cheese Corn (= Thirty-Six Views of Mt. Fuji Koshu Kaji Kazawa) The movement of a cast net or hand net depicted in Hokusai’s “Koshu Ishibansawa” is expressed with a delicately woven waffle cone. The triangular composition also overlaps with the peaceful figure of Mt. Fuji. Inside, we squeezed a generous amount of rare cheesecake with a refreshing sour taste. 【9】 Financier Olive (= Thirty-six Views of Mt. Fuji, View of the Ryogoku Bridge Sunset from the Miyagashi Riverside) “Mimaya Kawagishi” originates from the fact that the shogun’s stables were there. The ferryboat traveling on the calm surface of the river is depicted using financiers, and the umbrella that is hanging out is depicted using olives. The saltiness of the olives and sun-dried tomatoes harmonizes perfectly with the gentle sweetness, as if layered with the sunset on the other shore and the tranquility of Mt. Fuji. 【10】 Sakura scone (= Thirty-six views of Mt. Fuji, Tokaido Shinagawa Gotenyama Fuji) A scone full of the scent of spring, inspired by the cherry blossoms blooming on Gotenyama, a famous spot for cherry blossom viewing. It is characterized by a gentle sweetness with a hint of saltiness, and a soft aftertaste of cherry blossoms. 【11】 Rice Bavarois (= Thirty-six Views of Mt. Fuji under Fukagawa Mannen Bridge) Bavarois, which brings out the gentleness of rice, was born from a composition where Mt. Fuji appears in front of the line of sight under an arched bridge. A smooth and elegant dessert that fills your mouth with the richness of milk and the soft sweetness of rice. Lemon & Mint Cordial Mocktail The bittersweet and sour taste of lemon peel is combined with refreshing mint to create a refreshing summery taste, and the top of the glass is topped with salt and lime foam that resembles the spray of waves, expressing Hokusai’s worldview. ≪Afternoon Exhibition Chapter 14 “Thirty-Six Views of Mt.
