reservations started for lunch last year, and within a month for dinner. You can fully enjoy the charm of Hokkaido strawberries, which are in season again this year. The buffet features gorgeous sweets such as “Charlotte Phrase,” a traditional French sweet that wraps strawberry mousse and Bavarois in a fluffy biscuit, “Strawberry Mille-feuille,” a crispy Hokkaido butter-scented pie layered with custard and plenty of cream, and “Petit Fresier,” a combination of strawberries, mellow buttercream, and custard cream. In addition, we also offer dishes using strawberries, such as “Strawberry Quattro Formaggi” baked in a pizza oven in the open kitchen, and “Chicken Braised and Strawberry Pintxos”, a combination of slowly stewed chicken and strawberries, so you can enjoy the new deliciousness of strawberries not only as sweets but also as meals. After graduating from high school, he joined Royal Hotel Co., Ltd. Studied in bread making, French restaurant cooking department, and confectionery department. In 2006, after working at Patisserie Sadaharu Aoki in Tokyo, he moved to France and spent four years honing his skills at French restaurants and confectionery shops. After returning to Japan in 2011, he gained experience at hotels and Western confectionery shops in Keihanshin. Joined ANA Crowne Plaza Osaka in 2021 as a pastry sous chef. In 2022, he was appointed pastry chef and oversees the team. In December 2023, he will move from Osaka to Chitose, Hokkaido and serve as the first pastry chef at ANA Crowne Plaza Hotel Chitose.
