He was so impressed by the taste of the melt-in-your-mouth braised pork belly that he encountered it in Yokohama Chinatown that he decided to pursue a career in Chinese cuisine. After gaining experience at restaurants in Tokyo, he spent eight years training at the China Room at the Grand Hyatt Tokyo, and honed his authentic techniques and sensibilities while cooking in pots at hotels in the same chain in Hong Kong and Shanghai.
